Class Reunion

Last weekend, we celebrated our 10 year high school reunion. Being that I was the Class of 2006 Secretary, I was partly in charge of planning our reunion. It was a lot harder than I had anticipated but all in all I think that all of my expectations were met. It was challenging trying to coordinate everyone's schedules (adulting will do that to ya) and we were a little sad that a few couldn't make it but we had a great time. Our high school was smaller than most, but we had such a tight knit class it made the world of difference. I'll never forget the incredible memories I made or the people I met. After all, high school was where I met my husband!

Picture Overload...

I have a feeling the 20 year reunion might not be quite as fun. I guess we will have to wait and see.

Happy Mother's Day

We were back in Montgomery for the weekend to celebrate our wonderful Mothers. The weekend was nothing but enjoyable. Family time is always at the top of my list. Here are some scenes from our weekend.

Our niece, Hollon.

Our nephew, Garrett.

Our Mothers really do deserve to be celebrated. They serve so selflessly in the lives of their children. As I've gotten  older, my appreciation and understanding of a Mother's love has grown tremendously. I am forever grateful for the love I am given each and everyday from my Momma.

Happy Mother's Day!

Cinco de Mayo

It's May 5th which means it is time for a fiesta. If you know me at all, you know that Mexican food is my life. I could eat it everyday and the spicier the better.

I like to whip up my own little fiesta in my casa to avoid the crowd. So tonight, we are having some chicken quesadillas and black bean salsa.

The black bean salsa is a recipe I got from a can of rotel once and it is so good!!!

Black Bean Salsa

1 can of black beans (drained & rinsed)
1 can of rotel
1 can of shoe peg corn
1/4th cup of chopped red onion
Cilantro to taste
Juice of one lime
Cumin to taste

Stir and refrigerate for at least 30 minutes so all the flavors can get acquainted.

Enjoy!

Happy Cinco de Mayo!

Our Weekend

We had so much fun this weekend. We traveled to see our great friends in Oxford, Mississippi. Our visit was long overdue and it is so wonderful getting to catch up with them. Friday night we visited a local bar, where one of our favorite bands from our college days was playing. I'm starting to feel very old but nonetheless, we enjoyed ourselves.

Saturday, we ate lunch on the square at BourĂ© and then shopped some of the local stores.

Anna and Blake live in a great neighborhood that is thriving with young couples and small children. It's such a cute community. That night, we had a crawfish boil with a bunch of neighborhood friends. The children entertained us running around and playing in the water puddles. They had a ball!

I look forward to visiting them again soon. We sure have missed them!
